 Bring your appetite and come prepared to pass the napkins though, because the Smoke Station Bar-B-Que will have you digging into one of the most satiating and soul-satisfying meals in town.

Not at all chic (yet not at all shabby), Matt Starlings' Original Smoke Station is a restaurant where barbeque is buttressed by the ideals of Southern-style preparations established by the good ol' Southern pioneers who knew smoking meats with wood produced by nut-bearing trees is the way to do it. Everything from whole chickens, to pork, beef, and even turkey spend ample time in the Station's smoker where they are immersed in the wood's full-bodied essences that complement all of Starlings' hand-picked proteins. From there, the choice meats become the bigwigs of mountainous sandwiches, combo plates, sides, starters, and believe it or not, salads! For those who prefer more common between-the-bun options, the butter-soft pulled pork and chopped white meat chicken are inevitably great pickings, but the Smoke Station's "burnt end pork" is the REAL must do! Its name is straightforward, but if you're one of those people who will admit to slipping into the kitchen to pick at the salty ends of hot-from-the-oven pot roasts, then you'll surely fall victim to this sandwich's natural crust that reinforces the sunny sweetness and bit of bite from the tomato-based barbeque sauce. Equally precious to Starlings' menu are the slow cooked baby-back ribs that offer an irresistible combination of a blistered surface and fall-off-the-bone tenderness. Their taste makes it obvious for one to see that Starling follows the real Southern axiom - "low and slow"- for his smoker's low temperatures coax out the prized rib flavors while gracefully infusing the meat with smokiness that is unlike any other preparation. A swift brushing of piquant sauce in the final stage gives the ribs a sleek finish while yielding a ting of fire and spice that does not outshine the ribs' pleasant chewiness and wholesome smokiness.

While you could easily enjoy a plate of meat by itself, the Smoke Station's accompaniments are just as delightful as the barbeque. Hand breaded fried green tomatoes, vivid sweet potato fries, and surprisingly delicate fried green beans help ease the twinges of hunger before the main courses whereas ultra heavenly side items including Savannah red rice, sweetened baked beans, rich Brunswick stew, and tangy coleslaw help to round out bountiful meals and satisfy gluttonous appetites. An especially wonderful blend of toothsome pasta, smooth cream sauce, and a buttery crust comprise the eatery's luxurious mac-n-cheese giving the dish an indescribable saintliness. Whether you get your barbeque by the pound or by the bucket, the Smoke Station Bar-B-Que guarantees that every batch will be consistent in appearance, flavor, and quality. So when you see Matt making his rounds in the dining room go ahead and give him the compliments he deserves...and don't be afraid to leave a dab of sauce on your fingertips either. He'll know he's doing it right!
