Executive Chef and Founder, Rance Ruiz, discovered and fell in love with Chicago stuffed pizza while visiting his sister in Chicago.  Every trip to see her would include at least one stop at the local pizzeria.  Unfortunately, there were no restaurants at home in Orange County, CA where he was able to satisfy his craving for Chicago stuffed pizza, so the journey to create his own began.

 

Rance made his very first pizza pie in his parent’s kitchen at the age of eighteen.  After years of improving his recipes and searching relentlessly for the finest ingredients, he became well known for his delicious pizzas.  Creating the best Chicago pizza possible is his passion.  Rance only uses the finest ingredients possible and strives for perfection in every pizza pie.  Quality food is definitely the number one priority. The dough, sauce and even salad dressings are all made from scratch.  Rance’s Chicago Pizza offers three types of pies: Stuffed, Pan and Thin; with fresh salads, appetizers, wine and a variety of beers on tap.

 

STUFFED PIZZA

A thin layer of our house‐made dough is put into a two inch deep‐dish pan. We then fill the pie with the highest quality cheeses and your choice of ingredients. Then a paper thin layer of dough is gently placed over the cheese and ingredients to seal and lock in all the flavors. The pie is covered with our secret tomato sauce and baked in our oven until the crust becomes flaky and golden brown.

PAN PIZZA

To create this dish we use a seasoned deep dish pan and cover it with a slightly thicker, richer dough recipe. Next we add your choice of ingredients and cover them with a generous amount of Wisconsin mozzarella. Our zesty tomato sauce lightly covers the cheese along with a gentle sprinkle of Pecorino Romano. Finally we bake the pizza in our oven until the crust reaches its signature golden perfection. (Please allow 40‐45 minutes for dine‐in and at least 1 hour for delivery)

 

THIN PIZZA

Our thin pizza has a crispy texture with a layer of our signature sauce. The ingredients are placed on top of the sauce and covered with the highest quality cheese. (Please allow 30 minutes for dine‐in and at least 1 hour for delivery).

 

EVENT CATERING

 

Birthday Parties: Make a reservation for groups of 8 or more for dining. We can also bring pizzas to you party so you don’t have to cook and it makes clean‐up easy. We can bring plenty of salads and appetizers as well.

 

Corporate Lunches: We specialize in serving large company parties. Some companies have a monthly pizza party with all the extras included. Make it great meal and everyone loves to take some home.
