Baguette, the roll up banh mi stand, is now open weekdays from 11 am to 2 pm at 1509 East Madison Street (where BTG Coffee once stood).  CHS spoke briefly to cashier Vanny Him (her mother is the cook), and she mentioned that they are looking to hire people - so that they can expand their hours.  We learned that the same family operates the very popular Baguette in Corvallis, Oregon.  I had a chance to try their Vegetarian Banh Mi and it was truly impressive (rivals the Baguette Box Tofu Banh Mi offering).  They make their own bread at the Corvallis shop, but the facilities at Madison are much smaller.  Still, the bread is crisp, crunchy and chewy in the center - just like a baguette ought to be.  I did not have a chance to try one, but they also have some steamed buns.  All menu items are below $5.
