Walter Roush and Arthur McGuffey decided in 1961 to start a restaurant.  They had no experience, only a vision.  They purchased an Ice Cream store called Dairy Crest.  This business sat on the crest of the hill on North Broad Street in Fairborn. 

They changed the name of the business to Roush's Restaurant and added some sandwiches to the menu.  The first dinner served was Roast Beef and Mashed Potatoes.  The price of this meal was $1.25.  They began to make homemade bread for the restaurant from a recipe Art borrowed from his sister.  This same recipe is still used today.  Word of the restaurant began to spread and eventually business was thriving.

Roush's was expanded twice, once in 1967 and again in 1969.  In 1975 the restaurant was moved to the present location at 305 W. Main St. in downtown Fairborn.  Seating capacity at the new location is 170.  Later, a banquet room was added that has a seating capacity of 100.

The next change occurred in July of 1988.  Art and Walt decided to retire and sold the business to Mike and Joyce Gharst.  Mike had worked at Roush's in high school.  Although Art and Walt no longer own Roush's they both stop in most days either for lunch or just coffee and conversation.  Mike and Joyce have tried to change as little as possible.  New specials and face-lifts have been added over the years but Roush's is still the same as it was envisioned 40 years ago.
