home-spun dish like macaroni and cheese, you can find it at The Pink Magnolia. The cozy restaurant/piano bar at 240-B Main St. offers an interesting assortment of appetizers, sandwiches, salads and entrees designed to please a range of palates. Rather than being extensive, The Pink Magnolia's menu is eclectic, offering both classic chicken pot pie and shrimp scampi tossed with angel hair pasta, tomatoes, scallions and fresh garlic as entrees. There is also a range of choices for the smaller appetite and budget with appetizers such as Baked Brie with Apple and Candied Pecans, flat bread pizzas with assorted toppings and sandwiches featuring an Italian turkey burger and grilled steak served on a fresh-baked roll with caramelized onions and sautéed portobello mushrooms.
"We want to accommodate all price ranges, as well as tastes," said Eddie Castillo, chef at The Pink Magnolia. "There is
something for everybody."
Castillo is part of a duo of veteran restaurant employees
who make The Pink Magnolia tick. Working closely beside Castillo - whose kitchen experience includes time at the Corner House, as well as work as a corporate chef - is Tina Christensen, owner of The Pink Magnolia Restaurant. Christensen has also worked at the Corner House, both as a server and in the kitchen, and she and Castillo developed "The Pink Magnolia Cuisine" together.
"We wanted to offer some more classy items, like the
she-crab soup, as well as some good old-fashioned southern cooking," Christensen said. While the current menu includes several heartier winter dishes, offerings will change with the seasons, she said. More seafood, fresh vegetables and salads are on the horizon for spring and, throughout the year, the menu will include weekly specials.
"We like to utilize as many locally grown ingredients as possible, and plan to take advantage of the area farmers markets," Castillo said. All natural, and/or organic ingredients are already a focus in the kitchen, Christensen said."There are no antibiotics in our chicken and we use only non-farm raised fish," she said."That
makes some of our dishes a little more pricey, but it is worth it to know that everything is hand-picked and well thought out."
